I am a huge fan of Le Creuset, and have been making a gradual switchover to their products for all of my cooking vessels (gradual, because the cost is prohibitive). This was the first skillet / grill item I purchased from them.
First, the skillet is extremely heavy. But, when you're buying case iron you can expect that. The handle does get hot along with the rest of the pan. That is easily solved by purchasing a silicon handle cover (preferred over the cloth covers, which would negate the ability to put the whole thing in the oven). Yes, it's an additional cost for the pan. But honestly, if you're spending $100 on a skillet, what's an additional $10 for a silicon handle cover to get the maximum use?
I currently use the skillet on a gas range, although I used it on an electric range when living at a different apartment. The skillet performed well on both heat sources. There is some discoloration on the bottom of my skillet since moving to the gas range, but most of it is easily removed with some baking soda, a sponge, a little elbow grease. The same technique works for cleaning the interior. About a month after purchasing this skillet, I put some oil on to heat and promptly forgot about it. When I realized my error, I was literally reduced to tears when I found that the oil had burned. I was sure I had just completely ruined my skillet. I scoured the internet for solutions, and there was consistent advice to make a thick paste of baking soda and scrub the skillet. It took multiple scrubbings, but all the evidence left from that embarrassing debacle is a small patch (the size of a nickel) of discoloration. This was after half the interior was reduced to a charred mess.
I've used this skillet to cook eggs, vegetables, veggie burgers, and meats. My husbands preferred method to cook chicken is with this pan (heat oil, place chicken breast in oil and cook until that side is brown and easily lifts from pan, flip, pour in 1/2 cup of water or broth, cover whole thing with a plate, and cook through). I haven't had an issue with sticking. I simply heat the pan on medium-low, and cook away. I've found that the food does cling to the pan initially, but easily gives when brown. This size is perfect for two veggie burgers, or two medium sized chicken breasts. I'm glad I made the switch, and will continue to convert my skillets and grill pans over to Le Creuset based on this skillet's excellent performance.
